Main ingredients
3 and a half cups of half-cooked shredded chicken (about 500g of boneless skinless chicken breasts)
1 cup of diced celery (about 3 stalks)
2/3 cup of chopped pecans
1/2 cup of roughly chopped dried cranberries
2 teaspoons of finely chopped Parmesan cheese
1 sliced bread for garnish
2/3 cup of mayonnaise
1/4 cup of apple juice
3 tbsp of honey
2 teaspoons of apple cider vinegar
1 teaspoon of prepared yellow mustard (optional)
1 tablespoon of poppy seeds
1/2 teaspoon of onion powder, salt and freshly ground black pepper
Cooking steps
1. Evenly mix chicken, celery, pecans, dried cranberries, and Parmesan cheese in a large bowl and set aside.
2. In another bowl, stir all the sauce listed above until they are well mixed.
3. Pour the sauce in step two into the chicken bowl and mix well.
4. Put the above as a filling in sliced bread, croissants or bread rolls. They can be served immediately or stored in the refrigerator.
