Quick-frozen dumplings are very convenient to store and eat, and now it has become a kind of "instant food". Some quick-frozen dumplings are often prepared in the refrigerator at home for a rainy day. Although quick-frozen jiaozi is very convenient, it must be frozen and stored in the refrigerator. After being stored for a period of time, quick-frozen jiaozi often becomes dry, tastes stale, and even cracks in the skin.
If the quick-frozen jiaozi cracks or dries, the cooked jiaozi will not taste good. If the cracks are too large, the skin will break and the stuffing will leak, so jiaozi can only be thrown away. What should we do if we encounter cracks or dryness in quick-frozen jiaozi?
1. Freezing Quick-frozen jiaozi, of course, is to put the wrapped jiaozi in the refrigerator and freeze it before storing it. Before being put into the refrigerator for quick freezing, as long as the jiaozi is not close to each other, the frozen jiaozi will not stick and cause unnecessary cracks.
After jiaozi is frozen hard in the refrigerator, as long as it can be removed from the tray smoothly, it should be sealed in a packaging bag for storage. Because if jiaozi is exposed in the refrigerator for a long time, the moisture in jiaozi will be dried out, which is an important reason for the drying and cracking. As long as the quick-frozen jiaozi is put into the packaging bag and sealed, the phenomenon of air drying or cracking will reduce under the sealing of the packaging bag.
2. Washing
Although quick-frozen jiaozi can be stored in the refrigerator for a long time, if it is stored for too long, no matter how you cook it, it is not as delicious as fresh jiaozi. This is because the quick-frozen jiaozi is stored in the refrigerator, even if it is sealed with a packing bag, the moisture will be lost, but the effect will be better than that of bare storage.
To "bathe" the quick-frozen jiaozi means to soak the quick-frozen jiaozi in water, so that the dumpling skin can absorb some water.
After "bathing", the quick-frozen jiaozi will not dry after absorbing water, and the small cracks will close slightly, so that the cooked jiaozi will taste better.
The trick of "bathing": jiaozi should be cooked immediately after "bathing". If it is stored continuously, jiaozi should continue to be placed for quick freezing after passing through water, and can't be piled! Only when they don't get close to each other and continue to freeze hard can jiaozi not stick.
3. Sealing
Whether fresh jiaozi is frozen hard or frozen jiaozi is frozen hard again after "bathing", it must be sealed and stored, so as to reduce the loss of water and keep the frozen jiaozi as fresh as possible.
The sealed packaging bags of quick-frozen jiaozi can be tied tightly with fresh-keeping bags or self-sealing bags, as long as jiaozi is not exposed in the refrigerator. Because jiaozi has to "breathe" in the refrigerator, the moisture is also "evaporated" in the process of "breathing". With the barrier of the packaging bag, the quick-frozen jiaozi breathes in a small range, so the moisture will not run out relatively, and there will be no "evaporation" of the moisture.
